Belgian Corn Meal Waffles

Plain white or yellow corn meal work equally well in this recipe.

Whole milk will work in this recipe, but I use skim milk and it works just fine.

Instead of vanilla extract, orange or almond extract tastes good, too.

Yellow Plain Corn Meal
Ingredients
1 tbsp baking powder
1 tsp salt
3 tbsp sugar
1 tsp pumpkin pie spice
2 large eggs - separated and at room temperature
1 1/4 cups milk
1/3 cup shortening - melted
1 1/2 tsp vanilla extract
Directions: 

In a large bowl, sift together House-Autry Yellow Plain Corn Meal, baking powder, salt, sugar and pumpkin pie spice; set aside. In a separate bowl, beat egg yolks; whisk in milk and melted shortening. Beat egg whites until stiff but not dry; fold into yolk mixture. 

Pour wet ingredients into dry ingredients; whisk to combine completely and eliminate lumps. Add vanilla extract. Pour batter into a well-greased, preheated waffle iron. Cook for 5 minutes, or until no steam escapes.

Meal Suggestions: 

Great for breakfast, yes, but try these for dinner with fried chicken.
