Baked Catfish with Summer Succotash

Classic Southern succotash is a great side dish for the catfish coated in our oven-baked pork seasoned coating mix.

Ingredients

  • 3/4 House-Autry Oven-Baked Pork Seasoned Coating Mix
  • 4 catfish fillets (4-6 oz each)
  • 2 cups frozen butter beans
  • 1 cup frozen corn
  • 1/2 cup bottled red pepper relish

Directions

Preheat oven to 400°F. Moisten catfish filets with water; shake off excess. Dredge in House-Autry Oven-Baked Pork Seasoned Coating Mix until evenly coated on both sides. Place on a foil-lined baking sheet. Cook 15-18 minutes, until fish is browned on top and flakes when tested with a fork.

Cook butter beans and corn according to package directions; drain and rinse under cold water. In a large bowl, toss cooked vegetables together with pepper relish. Serve with fish.
