Baby Salmon Burgers

Top with Dijon Roasted Garlic Mayonnaise. Combine 2 tbsp roasted garlic, 1 tbsp Dijon mustard and 1 cup mayonnaise until smooth. Season with salt and pepper to taste.

Ingredients
1 14-ounce can salmon, drained with skin and bones removed
1 large egg, slightly beaten
2 tbsp mayonnaise
2 tbsp scallions, minced
1 tbsp Dijon mustard
oil for frying
9 small onion rolls, split in half
1/2 red onion, sliced into rounds
9 slices provolone cheese
lettuce leaves
Directions: 

Combine salmon, House-Autry Seafood Breader, egg, mayonnaise, scallions and mustard until thoroughly blended. Shape into approximately 9 small patties; then lightly coat with additional breader. Cook over medium high heat in a heavy skillet filled with 1/8-inch hot oil for 5-7 minutes, turning halfway through cooking. Drain and place on a bun with lettuce, onion and cheese.
