Great for dessert or even breakfast, this spiced applesauce cake can be made in advance and frozen.
- 1 package House-Autry Buttermilk Cornbread Mix
- 1/2 tsp nutmeg
- 1 tsp cinnamon
- 3 tbsp sugar
- 1 cup chunky applesauce
- 1 large egg - beaten
- 1 tsp vanilla
- 2 tbsp milk
- 1/2 cup nuts
- 1/2 cup light brown sugar
- 1/2 tsp cinnamon
- 1 1/2 tbsp butter or margarine - softened
Combine House-Autry Buttermilk Cornbread Mix, nutmeg, cinnamon and sugar in a bowl; set aside. Mix applesauce, egg, vanilla and milk in a bowl. Stir applesauce mixture into dry mixture until well blended. Pour into lightly greased 8-inch square pan. For topping, mix together nuts, brown sugar, cinnamon and margarine; sprinkle on top of cake. Bake at 400°F for 18-23 minutes, or until toothpick inserted comes out clean.
Great as a dessert for family get-togethers. Plus, it freezes well so it can be made in advance.
