Almond Crusted Oysters

Add crunchy flavor to oysters with almonds and House-Autry Seafood Seasoned Breading Mix.

Ingredients

  • 1/2 cup House-Autry Seafood Seasoned Breading Mix
  • 2 dozen oysters - cleaned and drained
  • 3 tsp olive oil
  • 1/3 cup sliced almonds
  • 1/2 cup parmesan cheese - finely grated
  • 2 tbsp flat leaf parsley - minced
  • 1 tbsp lemon zest - finely grated lemon wedges for juicing

Directions

Preheat oven to 425°F with oven rack set at top level. Line a baking sheet with nonstick aluminum foil. Combine oysters, olive oil and lemon juice in a bowl; toss. Place House-Autry Seafood Seasoned Breading Mix, almonds, parmesan cheese, parsley, lemon zest and 1 tsp olive oil into a zip top baggie. Add oysters and toss to coat evenly. Spoon oysters onto foil-lined baking sheet, shaking off excess breading mix. Bake for 4-6 minutes or until oysters are cooked thoroughly, turning half way through cooking process.
