Almond Crusted Oysters (COJ Video)

Ingredients
2 dozen oysters - cleaned and drained
3 tsp olive oil
1/3 cup sliced almonds
1/2 cup parmesan cheese - finely grated
2 tbsp flat leaf parsley - minced
1 tbsp lemon zest - finely grated
lemon wedges for juicing
Directions: 

Preheat oven to 425°F with oven rack set at top level. Line a baking sheet with nonstick aluminum foil. Combine oysters, olive oil and lemon juice in a bowl; toss. Place House-Autry Seafood Breader, almonds, parmesan cheese, parsley, lemon zest and 1 tsp olive oil into a zip top baggie. Add oysters and toss to coat evenly. Spoon oysters onto foil lined baking sheet, shaking off excess breader. Bake for 4-6 minutes or until oysters are cooked thoroughly, turning half way through cooking process.
