TIP OF THE WEEK: How to get super crispy baked chicken

Love baked chicken but miss the crunch you get from fried? Try baking your chicken on a wire rack (like the one you cool freshly baked cookies on).
Place your wire rack onto a baking sheet to capture any juices that might drip during cooking. Lightly spray it with nonstick cooking spray; then place your breaded chicken on top. Bake on the middle rack of a preheated oven. The hot air will circulate around the entire chicken, cooking it evenly. And, it won’t leave a mushy bottom like chicken that’s been cooked on a baking sheet alone.
